Oxtail is similar to beef shanks or short ribs on the bone. Oxtail contains a lot of collagen and nutrients, so it makes a fantastic addition to homemade beef broth because of its beefy taste. Due to the oxtail being an extremely muscular part of an animal, its texture improves with slow cooking.
